Tenuta Poggio Verrano, Maremma Toscana
Poggio Verrano is the concrete idea of a visionary: creating a red wine that is the expression of the territory it comes from, the Maremma Toscana, a landscape of irresistible natural and anthropological beauties.
Francesco Bolla, the winemaker, comes from a family that has a strong wine culture. Both his father, Alberto, and his grandfather made great wines both in Soave and in Valpolicella, such as the famous Amarone. In 2000, after having contributed to the expansion of the family winery, Francesco decided to launch his own ambitious project by making his own wine, always keeping in mind that a great wine comes out of a right marriage of soil, climate, vines and man.
Il Palazzone, Montalcino
Il Palazzone started its life as the dream of one man, Mario Bollag, who had spent years of his life surrounded by fine food and wine and yearned to make his own. Palazzone prune and select their grapes on the vine throughout the year so as to have the best possible expression of each vintage. The maximum yield allowed for the production of Brunello is 7.00 kg per hectare and rarely pick more than 5.00 kg per hectare. Fermentation takes place in beautiful wooden 50 HL barrels. The tannins in the oak are an anti- oxidant. This, combined with the micro-oxygenation permitted by the wood, gives wines that are more limpido with increased aromatic and tannin stability. They work closely with their consultant- enologist, Maurizio Castelli, in using large oak barrels for the wines.
They have opted for organic fertiliser in the vineyards. Rather than using chemical fertilizers which pollute streams and groundwater, we plant cover crops – nitrogen rich leguminous plants such as lupins and fava beans – in alternate rows. Whenever possible they effect manual operations rather than anti-fungal treatments. For example they will choose to strip away vine- leaves by hand in order to give the bunches as much air as possible after rain in order to avoid grey mould rather than spraying the vines with an anti-botrytis treatment. Opting for manual work rather than tractor intervention is always more expensive. However, “il vino si fa in vigna” – wine is principally made in the vineyard, not the cellar – and these results of these choices are evident in the final quality of their wines.
Azienda Agricola San Salvatore, Campania
San Salvatore was founded in the heart of the Cilento National Park, an ancient land, rich in history and tradition, never touched by intensive agriculture. The winery is located in the same area where the Ancient Greeks began the colonization of Magna Grecia and where for the first time brought Aglianico, Fiano and Greco grapes. Their vineyards were located in the same places where nowadays are located ours. Despite being a very young company, the first harvest was in fact in 2009, San Salvatore is very tradition-bound peasant Cilento, respects the time and methods, combining them with the use of the latest technologies, thus favoring vocations of the land and nature of the place.
San Salvatore has been certified organic by the European Union and adopts exclusively biological processes and biodynamic preparations. The company size is about 110 hectares, 23.5 with vineyards, the rest for olive groves, orchards, vegetable gardens and woodland, in order to maintain a natural balance in the earth. The vineyards are two, the first one and largest, is located in Cannito area, at the foot of Mount Calpazio that protects it from the elements, with a south-southwest exposure towards the sea, which allows it to be kissed from the sun throughout the day and be caressed by the sea breeze. For this respect for nature, pollution and negative environmental impact is minimised. Only recycled paper is used for the wine boxes, whereas a photovoltaic panels system, built on the roof of the cellar that makes it virtually autonomous, reduces Co2 emissions in the air of about 6,800 Kg/A
The farm not only has vineyards, but also hosts a herd of 450 buffaloes.
